Summer begins to wane during August, but these recipes will definitely help the celebration of summer continue for a few more weeks. From breakfast to dinner, there are scrumptious dishes that you, your family, and friends are going love, and make over and over.
Start the day with mouth-watering Lemon-Ricotta Pancakes with Maple-Blueberry Sauce. These pancakes are super light and fluffy with lemon notes that are the perfect foil for the sweet blueberry topping. After that, you'll have plenty of energy to whip up some of the Very Best Buttermilk Biscuits, a perfect accompaniment for so many meals, from breakfast to dinner. Light, tall, and flaky, these biscuits are easy to make, and just fabulous.
Goat Cheese and Tomato Tart is hands-down my favorite summer appetizer, with a crispy crust and creamy goat cheese filling, beautifully adorned with purple pickled onions, dead-ripe tomatoes, and Kalamata olives. It's addictive!
You'll also find my Cubanos hard to stop thinking about. The pork is cooked until it falls apart in an authentic Cuban marinade, topped with ham, Swiss, mustard, and dill pickle, all grilled until it's crispy outside and melting inside, yum! Ham also plays an important role in Country Split-Pea Soup with Ham, that breaks from traditional green split-pea soup by using yellow split-peas and carrots. The creamy soup is studded with chunks of potato and ham; this recipe made a split-pea soup fan out of me!
You'll definitely be a fan of Watermelon, Jicama, & Cucumber Salad on Arugula with Honey-Lime Dressing, fresh, bright, and juicy, and filled with Latin flavors, it's perfect on a warm summer's evening. August's warm days include picnics, reunions, and potlucks which just scream for Crispy Country Fried Chicken, and this month's recipe will show you how to get that perfect crust on the outside; so good! (And a biscuit and slaw on the side can't hurt!)
The end of summer brings an abundance of produce, including corn, zucchini, berries, and stone fruits. I plan to relish the month of August and hope you will, too! As schools re-open, and the days begin to shorten, I am keenly aware that summer is winding down, and soon it will be boots instead of flip-flops, and sweaters will replace tank tops. The little garden patch will burst in its last attempts to seed next season's growth, a bittersweet reminder that the season of summer is coming to a close. So let's take it all in, cook every fresh thing we can find, and make what's left of high summer a memorable time.
