Happy April!
How wonderful it is to see green grass, trees budding, and flowers beginning to appear! Even though the winter here was relatively mild, the arrival of warmer weather and sunshine is exhilarating. Equally thrilling, seasonal ingredients are beginning to show up; herbs, greens, fresh eggs, and more, all of which facilitate most welcome changes in our spring menus. This month I have selected some of my favorite seasonal recipes for you to make in your own kitchen; get ready for some deliciousness!
Breakfast and brunch recipes are among my favorites, and this month there are several that will shine on your breakfast table or brunch buffet. Fresh Fruit with Citrus Simple Syrup & Mint takes the humble "fruit salad" from ho-hum to memorable. A beautiful loaf of Fresh Strawberry Tea Bread accompanied by some whipped cream cheese or lemon curd is a delightful sweet note. For the main attraction, serve Brunch Ham or Smoked Salmon & Asparagus Strata (check out the video), always a big hit at catered events, and on my own table!
You will look forward to a lunch of Carrot & Ginger Soup and Feast's Asian-Style Tuna Salad topping some greens or served as a sandwich. Each is unique and distinctive in their own way, and totally addictive!
A little nibble before dinner is always nice, and Spicy Tuscan Bean Dip with Homemade Crostini will do nicely. The dip also adds a big pop of flavor when added to a veggie sandwich!
For a special spring dinner, make some Spring Lamb Stew (there's a video) served with a side of Spring Peas with Cream and Mint. To make the end of the meal really special serve a slice of Oh-So-Coconut Cheesecake (with video) for dessert; one bite will make you and yours fans!
